Our motto, Made on Honour, affects every facet of our being. Every day, thousands of tiny decisions need to be made on the Estate. Every decision made, must be the best decision for the wine – not necessarily the decision that is easiest on our pockets or the decision that is the simplest solution. Our need for perfection is driven by our honour – it is our honour that ensures that we will only ever release a vintage that has greatness, and nothing less.

The Wines
Every decision we make on this Estate has one common goal – the wines. Our wines are the true fruits of our labour, our raison d’etre, the gift we share with the world after years of toil. We are fortunate to be able to farm a variety of cultivars on the Estate thanks to our diverse soils, and we aim to truly express these individual terroirs through our minimal, hands-off approach to winemaking
Wine Focus
Wild Yeast Chardonnay
The perfect wine for these cooler autumn days! True to its moniker, the Wild Yeast Chardonnay is fermented using the native, wild yeasts that occur naturally on the skins of the grapes. Unwooded, it is fermented in underground cement tanks in a slow, volatile process that can take anywhere between 6 – 9 months. This method, although risky, results in incredibly expressive wine with a wisdom that is unattainable in wines made using commercial yeasts. Can be enjoyed for the next 3- 4 years.

Springfield encourages its customers to come and see where it all happens. Our tastings are informal – no need to book! Tasting fee of R100.00 for any 5 wines applies.
Groups larger than 8 by prior appointment only – unfortunately we are not equipped for tour buses.

Tours
We offer cellar tours on weekdays, where you can see how a real working cellar operates right through the year. Our cellar tours are free of charge and take around one hour. During harvest time we will offer only two tours a day at set hours. Please let our tasting room staff know that you would like to go on a cellar tour, or book ahead of time by emailing tastingroom@springfieldestate.com
